Chocolate Cake (Vegan)

My go-to cake lately is chocolate cake. And it's a super simple recipe. (And more often than not, one of my kids makes it.) And it always gets compliments. AND it's vegan!

So since several people asked about it, I'm posting it here. 

The thing about this recipe is it's deep chocolate flavor. REAL dutched cocoa is the secret. If possible, don't use any other kind. And certainly don't substitute with that weird powder Israelis call chocolate for baking. It will be all wrong, so just don't, ok? Thanks!

Vegan Chocolate Cake

This recipe makes 2 cakes - 9 inch round or 8 inch square both work. Actually, this week I made it in my 8.5 inch bread pans and it was extra moist and delicious!

3 cups flour (I used 80% whole spelt, but really any flour should work)
2/3 cups dutched cocoa powder (I get it in the shuk in Teverya, I'm sure you can find it other places too. If you live near me, you can join our group orders from the store that carries them! Be in touch!)
2 cups sugar
0.5 tsp salt
1.5 tsp baking soda

MIX all the above together in a mixing bowl. Make a well in the center.

Add:
1/3 cup oil (I use sunflower oil, but use whatever you prefer)
1 cup cold coffee (plain, unsweetened, no milk, nothing whatsover added!)
1 cup cold water
3 tablespoons apple cider vinegar

MIX everything together until well combined. Pour batter into lined or greased and floured pans.

Optional, but highly recommended: 1/2 bag or more of chocolate chips - sprinkled on top!

Bake at 190C for about 35 minutes (test with a toothpick before declaring them done). Cool before cutting.

Shopping Finds of the Week

Today I am here to admit that Aliexpress is still my friend, and here's why:

We've been having trouble finding leotards for our athletes with the sleeve length we prefer. So we ended up buying long sleeve leos, promising to alter them. But paying a seamstress to do the alteration just jacked up the cost too high. It was time to break out our own needle and thread.
The problem was - STRETCH. It's hard to sew in a way that still leaves stretch if you don't really know what you're doing, so we decided to take a different approach. We chose to do the hems with elastic thread. The only elastic I had in the house, though, were too thick for this! And the sewing store is in a different city and I didn't feel like trekking there without knowing if they'd have what I wanted. So - online shopping to the rescue!
After searching a LOT, we found this elastic sewing thread that is priced really low, arrived really quickly, and did the job well! Kudos to my daughter for sewing it herself!


Another super find was these packing organizers! They make it so much easier to stay organized while traveling. I got them for one of my kids and they have gotten so much use! And they are SUPER discounted right now, so you might want to grab them. (I definitely paid at least double!)

And lately, Aliexpress offers to combine your order into one package and ship FAST. And it WORKS!!

What you REALLY need for Pesach


 Pesach's almost here! And the stores are getting full of special foods for Pesach. And isn't that so exciting?!
But then, you start to pile them into your shopping cart, and you suddenly realize that the cost really ADDS UP FAST. Uh oh. What about that little thing called "a budget"?

Here's the thing. Pesach is ONE week. So if you can make it one week without buying premade cakes and cookies and crackers and who knows what else, you'll save a lot of money.

There are some things you really do need for Pesach:

Matzah

Grape Juice or Wine

Maror (this can be lettuce! But I also bought a small piece of horseradish for about 6 NIS at Yesh)

Karpas (Potatoes or Celery)

Charoset (I always have to improvise this one because of my nut allergy and other family members' uncooked apple allergies. (So much fun!) Last year I made a stewed fruit charoset - chopped apples stewed with cinnamon, raisins, dates, and grape juice. I might have put some dried apricots in there but that's no longer an option for me due to another allergy popping up. It worked out well, though, so I'll probably do something similar again.)

Salt

Other basics for things you like to eat.

I make sure we have these foods available:

Chicken (whatever's on sale leading up to the holiday)

Beef if there's a good sale or if I stocked up another time and there's some in my freezer labeled Kosher for Pesach

Fish fillets if there's a good sale or if I stocked up another time and there's some in my freezer labeled Kosher for Pesach

Eggs

Oil

Butter

Jelly

Cream Cheese

Basic fruits and vegetables (including potatoes and onions because we MUST have potato kugel)

Ingredients for brownies not already listed above: potato starch, cocoa powder, sugar, baking powder, chocolate chips

If we buy tomato paste and cheese, we can make matzah pizza or matzah lasagna, so we try to make sure there's some of that around.

I like to make a HUGE vegetable soup at the beginning of the chag and use it for the chag and also several days of Chol Hamoed - this way there's food around.

I am committed to avoiding making anything that takes too much time or energy so that also will keep my expenses down.

Everything else is extra. My family really likes eating kneidlach and pesach rolls so having a couple packages of matzah meal on hand is good - but I don't personally make these anymore because my wheat allergy gets activated when I touch wheat-based products and any matzah meal dust in the air is hazardous to me...

I personally stock up at Pesach on things that are not going to contain traces of wheat at this time, but you don't need to if you don't have a reason to! So don't go crazy. 

If it's been a tough year for you financially, you can do this simply. Just make sure you have brownies on hand to keep everyone happy - make the recipe I posted and you can't go wrong! Warning: You may have to make a batch every day😀.

5-minute supper!

 

Tonight, I wanted soup. But I didn't want to spend time in the kitchen, obviously. (That's what extreme burnout does to me...)

So I took stock of what I had on hand and it hit me: with just 5 minutes of work, we can have tomato soup with rice and croutons!


Here's what I did:

Tomato Soup with Rice

1-1.5 cups leftover cooked brown rice
1 large can crushed tomatoes
Water - the amount that fits in the empty can
1/2 tsp. dried onion flakes
1/2 tsp. dried garlic flakes
1/2 tsp salt
a pinch of hot pepper flakes
a couple dashes of coarsely ground black pepper

Mix it all together in a pot and heat on the stove until heated all the way through.
Serve with croutons.

Quick croutons

Several pieces of leftover challah/bread
spray oil
granulated garlic
dash of salt
dash of pepper

Cut the challah/bread into small pieces. Sprinkle salt, garlic, and pepper over the pieces of bread. Spray with oil.
Bake at 220C until golden brown.
Serve with soup or salad.

Import taxes for online purchases: Everything you need to know

Do you live in Israel? 
Are you wondering what to expect regarding taxes and fees if you shop online?

This guide will help you understand the basics that apply to residents of Israel when shopping online from overseas (yes, even if you're not a citizen, you need to know how your orders will be handled!)

Most of us shop this way to save money, so who wants a tax bill surprise when the order gets here? This post will help you avoid a tax bill (legally, of course!).

Note: the same regulations apply to other packages sent from abroad, even if they are gifts!

Here's the rundown (full regulations can be found on the Israel tax authority's site)


When you get a package for PERSONAL use (NOT BUSINESS USE), the value of your purchase or package will be converted into US Dollars by the tax authority (using the exchange rate of the day they process it) to determine if it's subject to tax (no matter what currency was used when it was purchased).

Purchases up to $75/Packages with a declared value up to $75 - no taxes

Purchases or packages with a declared value of $75 and up to $500 - VAT will apply in most cases (17% currently), and Purchase Tax (variable rates) may apply, but no customs taxes

Purchases or packages with a declared value over $500 - subject to all taxes (VAT of 17%, Purchase Tax (if applicable), and Customs Tax which varies by category)

Please take note that purchases and packages (even gifts) of up to $75 in value will automatically be subject to customs clearance fees if they arrive using an EMS service*, and some other types of deliveries may also be charged this fee (it's about 40 shekels right now). If the value of the purchase is higher than $75, the customs clearance fee can be higher as well.

Other fees are often added on by shipping companies, and there is not much oversight on the matter. I once saw a bill that included the following fees: Handling Fee, Import Approval Fee, VAT, Computer Fee, Unloading Fee, and a Storage Fee. Watch out for these fees from shipping companies/courier services - I recommend you always arrange to get your packages via a service that guarantees your fees have all been prepaid, if you can!

Please be aware that the purchase price only (not purchase + shipping) will determine whether an item will be taxed. If it is deemed taxable, all applicable taxes will be calculated on the purchase price + the shipping price. This means that if you order something for $75.01 plus $15 shipping, you will be taxed on the total value of $90.01!

One more important point: If you order multiple orders addressed to the same person, with the same address & phone number listed, from the same seller and they arrive within 72 hours of each other, customs may combine the orders and treat them as one purchase for tax purposes, or they may not. But it is a possibility you should be aware of before you place multiple orders. 

I recommend ordering at least 3 days apart or ordering with different names and contact info (including the tax ID number you provide for clearing customs).

If your order is stuck in customs, or if you feel like you were charged tax by mistake, you will need to contact the customs office, you can do this via email: for packages arriving via Israel Post, contact dhe@taxes.gov.il, and for packages arriving via courier services or other delivery services, contact tpntbg@taxes.gov.il.

Tips to avoid getting scammed

Have you gotten an email or text about "an order" of yours that's waiting for payment of some trivial amount? Or that has to clear customes?

Maybe you've received a text message telling you that your account is in danger of suspension and you must verify your details? Or maybe an email asking you to click a link?

Or one of the many other messages that people are getting out there?

BE CAREFUL. Many Israelis are getting scammed and find their credit cards compromised after clicking one of these messages!

How can you tell if that message is a scam/phishing message? Here are some tips:


Spelling mistakes in the URL - don't click! 

Look carefully at the picture above with screenshots of actual text messages I've received - that link that is supposedly from Israel Post is from "Israeilpost.com" - which is NOT the Israel Post URL!


Don't trust short links or unofficial-looking links:

Always go through official websites when you need customer service, tech support, or to authorize changes to your account. This applies to your bank, credit cards, postal services, and even websites you shop on. Look in the picture above - at least one link is "tinyurl" link, another is a "rebrand.ly" link. Big Red Flag.
 

Verify links first:

Legitimate websites use the url you know for that site. The post office does not send out short links! Neither does your bank. When in doubt, go directly to the website (or app) you think the message came from, and log in on your own. A legitimate request will show up when you log in. If you got a text message telling you to pay a customs fee, but you can't see the fee and information about it when you track your package, it's a scam. Same goes for resetting your bank account password. If you log in to your account and there's no message there, the text/email you got was almost certainly a scam!

Urgent messages should make you wary:

Scammers will often try to get you to act quickly. They'll tell you that you must pay within X number of hours, or that your account will be closed in X amount of time if you don't act quickly. If they manage to make you feel panicked, you're more likely to give out sensitive information. So always take the time to double and triple check before you click on that link or agree to reset your account. If the message seems out of the blue AND urgent, be wary! See the picture above - one of the messages says that your package will be returned to sender if you don't pay! If you really owe taxes, this won't be the way you get this message.

Same goes for phone calls!
If someone calls you and urges you to pay a fee over the phone with your credit card, even if they seem to know who you are, don't pay! Call the number you have for the contact person you work with at that company (it's often an insurance scam, so call your insurance agent, or whichever company they claim to be from) and speak with them directly so you know you're speaking to a legitimate person and not a scammer.

A friend called asking you to wire money because they're stuck overseas without money? 
Phone numbers and voices can be cloned. If your friend is truly overseas and stuck, chances are they won't be calling you. If you're concerned about a friend overseas and you can't reach them when you call them, you can get in touch with the embassy in that country or a trusted contact there, who can check on your friend. DON'T WIRE MONEY because of a phone call. Always find a way to verify the person is who you think they are before you agree to send any money! It's really truly rare that any request for you to urgently wire money is actually legit. So my bottom line is BE WARY!

Did someone you've got saved into your contacts reach out to you and ask for a verification code for WhatsApp (or any other app) that was sent to YOUR phone? DON'T answer. They've likely been hacked and the hacker is not trying to take control of YOUR whatsapp! NEVER share codes like this. There is no reason someone else needs YOUR verification code, unless you've authorized them to access your account (but why would you?). So be very, very wary.  


My thoughts about scammers:
Scammers are theives. They prey on people in whatever way they think they'll get you to part with your money or your sensitive information! That doesn't mean you can't still help a friend in need, or give tzedaka! Just be sure to do this in a way that you're sure your money will get where you intend it to go.
